Crispy, Crunchy, No-Cooking-Required Bowl of Goodness
This salad is basically everything I had on hand in the kitchen on a hot day when I was craving a crispy, crunchy, no-cooking-required bowl of goodness. You can add loads more to it or less, depending on what you like or have in the house. There’s no real recipe required, except for the vinaigrette, which is a classic one. The above salad contains: almonds, arugula, avocado, celery, cucumber, dill, endive, fennel, pear, radish, and red onion. We’ll be eating it (or a variation thereof) all summer long at Kitchen 511.
Serves 4
Ingredients for Vinaigrette
1 large garlic clove, minced
1 teaspoon Dijon mustard
1/3 cup olive oil
2 tablespoons red wine vinegar
Salt and freshly cracked. pepper to taste
Preparation
Combine all ingredients and set aside while prepare salad.
Ingredients for Salad
1/2 cup almonds, roughly chopped
1-2 avocados, diced
2 celery stalks, roughly chopped
2 tbsps. fresh dill, chopped
1 cucumber, seeded and roughly chopped
2 endive heads, roughly chopped
1 small fennel bulb, cored and roughly chopped (plus save some fronds for topping salad)
4 oz. lettuce of your choice
1 pear, cored and roughly chopped
Handful of radishes, sliced
1/2 small red onion, sliced
Preparation
Place all ingredients in a large bowl and toss with vinaigrette just before serving. Add freshly cracked pepper and enjoy!
