Broccolini with Garlic
We’ve been eating broccoli this way for years, but it was only recently that I started making Broccolini with Garlic. I might not be going back to the big stuff! Broccolini cooks much faster, and I prefer the taste, which is a little sweeter. I either make it as a side dish or will add it to a salad once it returns to room temperature.
Serves 4
Ingredients
1 1/2 pounds of broccolini (about 4 bunches), washed & trimmed
2 tablespoons extra virgin olive oil
4 garlic cloves, roughly chopped (or thinly sliced)
Pinch of red chili flakes
Salt and freshly cracked pepper to taste
2 tablespoons fresh lemon juice
Preparation
Bring a large pot of salted water to a boil. Add the broccolini and once the water returns to a boil, cook for about 2 minutes or until tender but still crispy. Drain and set aside on a clean towel to absorb any excess water.
Over medium heat, drizzle olive oil in a pan. Once the oil is hot, add the chopped garlic and sauté for about a minute. Add red chili flakes, and sauté for another minute.
Add the broccolini and sauté for another 3-4 minutes. Season with salt and pepper and squeeze lemon juice over the broccolini before serving.
